We offer this coffee across several roast levels on our Toll Roasting menu. It's available as a light, medium, and dark roast where its many characteristics and attributes are highlighted.
Not only is it versatile across roast levels, but it’s also a great regional cup that showcases the dynamic flavors of the Cauca growing region. When someone asks for a sample, we default to a medium roast profile to bring out some of this coffee's strongest qualities: sweetness, texture, and total approachability. It's the ultimate crowd-pleaser.

About
Cauca is in central-western Colombia, stretching from the Western Cordillera mountain range to the Pacific Ocean. Ocean winds and elevation result in Cauca being one of the coolest regions of the country. The coffee in this area is grown mostly by indigenous or Afro-descendant communities. Geographically, the region has many features including the Popayan Plateau, many rivers, and the central volcanic mountain range.
