New in 2023, the Roasters' Winter Workshop offers the next level in roaster training and evaluation. Participants will receive personalized roast plans and insights into our green buying strategy.
This class is for experienced roasters who want to continue their education and be challenged with roasting exercises, group feedback, and new coffees. Students will leave with new skills to select the right greens for their business and tools to dial in the perfect profile quickly.

This class is intended for experienced roasters or students who have attended our Roasting 101 class in the past. If you have questions about your eligibility, email sales@millcityroasters.com
Students will receive a survey prior to the start of class which will gather some information about their roasting experience.

Practical exercises for skill-building
Roasters tend to be creatures of habit. They find patterns and templates that work on specific systems with specific coffees, and employ them as a means of efficiency and cost-savings. In this class, we challenge students to step out of their comfort zone to find new approaches to roasting.
Personalized targets
We use information about the roaster you use at home, the coffees you are roasting, and the roast styles you gravitate towards to build customized roasting exercises for you. Working collaboratively, you’ll choose specific green coffee to work with and explore it through profiling exercises.
Higher level learning
Building upon skills learned in Roasting 101, we’ll tackle more advanced ideas about roasting theory and technique. With a focus on production roasting best practices, this class is designed to help roasters work more efficiently from sampling to profiling, and finally to order fulfillment.
Green buying strategy
We’ll share our approach to green buying using the coffees in this workshop as a case study. Learn how we shop for, evaluate, and decide on what greens to purchase for our roasting programs.
Learning collaboratively
Employing group discussion and critique, students will debrief together as a group and provide feedback and input to each other for the next steps. Collaborative roast evaluations and discussion sessions utilize the experience of every student in the group.
From the roaster to the cupping table
Frequent cuppings scheduled throughout the class will give us actionable feedback on the quality and successes of the roasting exercises. Group cupping and calibration will strengthen students’ sensory skills and descriptive vocabulary while informing plans for subsequent roasts.
Covid Testing Required and Cancellation Policy
Updated COVID Policy as of 5/11/2022
For all current classes, students must submit a negative COVID test. There are two options for approved tests:
- Negative Lab-certified PCR COVID-19 test (test sample taken within 48 hours of the start of class on Thursday morning). Testing is at students’ expense. If the PCR test is returned with a positive result, registration fees will be refunded.
- Negative rapid antigen test taken onsite at Mill City Roasters. Mill City will provide rapid tests on Thursday morning. If a student tests positive using a rapid test, they will not be admitted to the roasting facility. Registration fees will be refunded.
If future classes are required to be canceled due to Covid-19 surges creating unsafe travel & gathering conditions, Mill City will make that decision no later than 15 days before the first day of your class. When making travel plans to attend class, we highly recommend investing in trip insurance or to delay purchasing flights or reserving hotel stays until within 2 weeks of your class date.
If you need to cancel or move your registration due to a Covid-19 exposure or diagnosis, our team can help you do that at any time. If you need to cancel or move your registration due to a non-emergency issue, please try to let us know no later than 2 weeks before class so we can give your spot to another student.
