The foundational skill of any coffee professional is the ability to evaluate and identify flavors in coffee. In this class we'll begin building a strong foundation on which to build your sensory skills. A full day of sampling and discussion, this class aims to expose you to a wide variety of sensory exercises and terms, then gives you strategies to implement this learning in your own coffee career.
Back in January, we scheduled classes through to July 2020. As we move through these months, we have been canceling classes when it has become clear that we would not yet be able to safely gather. For those dates still available on this page, please be advised they are tentative up until about three weeks before the class date. Do not make travel arrangements until class dates are confirmed. If you have questions or want to tentatively register for a class without paying, please email Lauren. In the meantime, we are working on developing remote classes and to create a modified curriculum that would allow for us all to stay safe. Details will be announced soon. Beginning with Basics
Exposure is fundamental to developing your sensory skills. Through the use of different aroma kits and solutions, we’ll begin to simply expose you to a number of different aromas and flavors and give you the vocabulary through which to communicate what you are experiencing. Our instructors will share their personal experiences with building their own sensory skills and help you to understand the mechanics of your own experiences with aroma and taste.
We will spend time alongside you at the cupping table to teach you how to set up and facilitate a cupping and feel confident in your abilities as a coffee cupper. We’ll discuss protocol and etiquette as well as how cupping can become a more integral part of both your craft and your business planning.
Once we’ve covered the concepts, we’ll tackle a series of coffees using our new sensory tools. As we move further into coffee characteristics we’ll begin to discover how processing, profiling and age can begin to affect what we are tasting in our coffee. We’ll discuss how we can use our sensory skills to guide us in marketing a great coffee as a product or reallocating a not-quite-great coffee back into a successful blend.
