As a beginner, hobby coffee roaster with very little experience I went into these classes with a lot of questions. After the first few days I had ten times more questions. Fortunately the staff are very patient and Knowledgeable. I learned more than I expected and they never made me feel stupid. I’m looking forward to applying what I learned on my new 500 Gram sample roaster from Mill City Roasters. The team that has come together at Mill City is first rate. They made my time there fun and I look forward to working with them in the future. We had a wonderful, diverse group and I would recommend this class to anyone who is looking to increase their knowledge and skills in everything from purchasing high quality greens, roasting them to their greatest potential and extracting the goodness from those beans.
My husband and I participated in the 4 day roasting for entrepreneurs class. The Mill City Roasters staff is excellent. Our time was spent divided between classroom discussion and hands-on experience with cupping, roasting, and extraction. Participants were exposed to the science, math, art, and life cycle of coffee. We leave Mill City with a deeper understanding of all the facets of roasting and drinking flavorful coffee.
If you are interested in developing into a coffee roaster this class will not disappoint. Steve, Derek, Lauren, Adrianne, and Serena make sure everyone is well taken care of and engaged in the day.

Excellent course! I would recommend this course for anyone interested in running a coffee shop or a roasting business.
Instructors are professional and experienced. All of the staff care work hard to ensure the course is successful and they genuinely care about your learning.
Instructors were very knowledgeable. They were helpful and easy to talk to. I was exposed to so many things that I no idea about and so many things that I didn’t know I needed to know. I believe that I can contact any one of the instructors for questions in the future and they will be happy to answer and assist. I am so happy to be going down this exciting new path. I cannot imagine a better adult education experience.
My wife and I both took the 4 day combined course in September of 2019. I can’t say enough how much we enjoyed the class, and how much we learned during the instruction. We are both far more confident in our abilities at this point. We still have much to learn, but this laid a great foundation for us to continue to grow. I am so glad we chose this course over all the others listed on the SCA website. I would be shocked to find out that another training location puts out a better course. Lauren was a gem. Always upbeat, always friendly, always full of information and happy to share it. Derek loves what he is doing was so eager to share his knowledge with us. He also had a knack for being there at the right time with praise, which really helped our confidence when we were actually using the roasters. He is also the only person in the last century to successfully pull off a neckbeard. Thank you to Serena and Adrienne as well, for their part in the training. Both were so friendly and helpful. Initially we weren’t entirely certain what to make of Steve, but by the end of the course there was little doubt that Steve does genuinely care about what he is doing and that his intention is to make sure that we are all prepared to be better at everything coffee, and that we are 100% satisfied with the training and anything else we might be purchasing from him. We’ve been set on a Giesen roaster for a year, and we’re actually considering changing that to one of Steve’s roasters now simply because I left Minneapolis convinced that he’ll stand behind everything he does and that he’ll go out of his way to make sure that we’re pleased. That’s a great quality to have as a small business owner.
TL;DR If you’re on the fence about the course, don’t be. Take it. It’s fun, it’s full of information and it will make you better at all things coffee. They truly want you to be successful at what you do.
It’s hard to find a place to start with this review. Our team took this course in September 2019. We did all 4 days and it was a great experience. I will start with the part that matters less, the actual course. We covered cupping, green buying, roasting, extraction methods, wholesale, retail, etc. Everything you could imagine is either covered or you can freely ask about it. You get hands on roasting practice and roasting theory application. I can’t count the amount of coffees that we cupped and the amount of practice we put in trying to hone in our senses. We got to tour a green coffee supplier’s warehouse and ask their staff all about green buying. It was very educational even if you’ve worked in the coffee industry before.
But the more important factor in all of this is the people. Everybody at Mill City is great. We specifically worked with Lauren, Derek, and Steve, mostly and they are beyond amazing human beings. The 3 of them are open to anything you want to discuss and will help guide you in all areas of coffee and/or life. Lauren and Derek put their heart and soul into teaching you throughout the 4 days. You can tell this is their true love and passion and it will transfer over into you to want to become the best coffee professional and human that you can be. I am truly thankful for their time invested in the students. Steve will give you the truth about any subject and won’t sugar coat it. He’s going to tell you how it really is.
This review probably sounds like I’m TOO pro-Mill City. Maybe I am, but I don’t get anything out of this review. If anything, this review cost me a lot of money (lol!). You can’t put a price on people. If you’re debating this class, take it. It’s very much worth the money.
In short, it really does not matter if you are on “ground zero” as a roaster, or demonstrate established coffee roasting skills, you need to consider taking the courses offered by Mill City Roasters. Personally, I am glad to have experienced this course, as it is anchored in industry ethics, empathy, and expert testimony. The courses generally feature a blend of very thoughtful, comprehensive “classroom” instruction, balanced by hands-on work with roasting equipment and an exploration into sensory development through facilitating cupping activities. This educational structure works to satisfy many different learning styles, of which they are cognizant and to which they are responsive.
Mill City Roasters are truly experts in their field. Their patient, congenial approach with students really takes the edge off of what could be an intimidating learning process. These courses certainly represents an investment in oneself, and Mill City Roasters are very good partners in this equation — this can be difficult to find in personal- and skill development courses!
Those at Mill City Roasters deserve to be proud of the work they do; I highly recommend you trust them to help you understand both roasting and the coffee industry and enroll in a Mill City course.
