Derek is diving into the new El Salvador Pacamara Natural that we just got in stock. Derek is exploring using static airflow for the special Pacamara. Pacamara's are large beans that are also low in density so they require a little different approach from Derek's perspective. He is working towards dialing in roasting this coffee to its sweet spot.
