In our roastery 

We look to coffees from Mexico as greens with great crowd appeal and comforting familiarity. This coffee hits that mark and has extra dynamic range to branch into lighter roast levels with its complex acidity and sweetness. After tasting many wild anaerobic naturals and honey-processed coffees over the past crop season, a washed offering from Mexico is a welcome reprieve. 

In your lineup

This coffee is a great option for roasters rotating through offerings from Latin America and those who are looking for a break from more challenging flavor profiles. Lighter roasts at +14°F to +19°F past first crack will present grapefruit and green apple characteristics. Developing further past those temperatures will start to bring out cooked citrus, deep sugar sweetness, and warming spices.

About

Comon Yaj Noptic cooperative was founded in 1995 by a group of smallholder farmers from indigenous groups in the area. (Comon Yaj Noptic means "all of us think.") Today there are about 160 producer members. The producers here have the advantage of many ideal conditions, including good altitude, obviously a very lush environment, and high-quality coffee varieties like Typica, Bourbon, and Caturra.
