In our roastery

This coffee is part of our Colombia Varietal Series, which showcases the diversity of rare coffee varieties being produced in Colombia. These special coffees were personally sourced by Bryant on a buying trip to Colombia with Cafe Imports. To view the other coffees selected during this trip, click here. From Bryant:

Eleven of the sixty coffees we cupped in Colombia were Geshas. Each one had its own unique characteristics, but Natalia’s stood out. Rather than a delicate bouquet of floral and citrus, the cup was jammy and dense, with a ton of fruit that was complemented by floral undertones. It stood out as a completely novel expression of this rare varietal.

Natalia produces coffee on her 1.5-hectare farm in Acevado, Huila. She is also president of Flor de Café Women’s Association, a group that highlights the work of women in the production of specialty coffee. The association lives by the motto, “Like coffee’s bloom, women too deserve to truly thrive.”

Natalia and her husband, Lisandro, cupped with our group and hosted us at their home for a coffee break where they brewed us their coffee. We sat bordering the Amazon Rainforest at the top of a valley while their kids ran around playing and partaking in sips of coffee that was leftover. It was short and sweet, but hospitality in the purest form.

This coffee is extremely limited.

When roasting this coffee, first crack is quiet. It may be helpful to mark the first crack at the first outlier, instead of waiting for a rolling crack. Dropping this coffee 8°F - 14°F past first crack for your first roast will be a good window to decide where you go next, or use our reference profile as a starting point.

About

Finca Alta Gracia, Natalia Lezama Ramirez's farm, is 1.5 hectares of stunning landscape in the Acevedo region of Huila, Colombia. This particular region is on the border of the Amazon Rainforest, and it is common to see big rolling clouds coming in over the mountains, providing ideal coffee-growing conditions.

Natalia has planted Gesha, Ombligon, and Caturra varieties here in addition to the traditional Colombian varieties. Her coffee is fermented for 60 hours, washed, and then dried for 15 days in parabolic dryers.
