In our roastery
This offering from the region of Yirgacheffe was intended to be a blender-only coffee, but on our purchase cupping, we found this coffee to have great sweetness and acidity to make it stand out as a single origin as well. This year, we committed to a larger volume that would allow us to carry this coffee for several months. Right after we secured our bags, the remainder of this coffee sold out very quickly.
During this season of buying pressure for green coffee, it's more important than ever to source intentionally, plan your menu, and buy or contract what you need when you need it. If you wait, you might miss out on great offerings like this one, which went from plentifully available to out of stock seemingly overnight.
In your lineup
This coffee would be beautiful as both a hot cup and a flash-brewed iced coffee. It has just the right balance of sweetness and acidity to make it refreshing and craveable. Roast this coffee on the lighter side to offer it as a manual brew offering, or use it in small percentages in a special seasonal blend to add that pop of citrus to your cup.

About
This coffee comes from the Gelana Abaya washing station near the kebele (village) of Asgori, located in the woreda (district) of Abaya. Gelana Abaya is another gem of the Yirgacheffe region. This area is nestled between Lake Abaya on the west and the town of Yirgacheffe on the East.
Coffees in Ethiopia are typically grown on very small plots of land by farmers who also grow other crops. The majority of smallholders will deliver their coffee in cherry to a nearby washing station or central processing unit, where their coffee will be sorted, weighed, and paid for or given a receipt. Coffee is then processed, usually washed or natural, by the washing station and dried on raised beds.
