In our roastery
During a sourcing trip to Colombia in Febraury, we were able to visit and cup coffees with the exporting group Banexport, who produces this Gran Galope Regional Blend. This lot was on the cupping table in Colombia at the end of February, and it arrived early April to our warehouse. The coffee stood out for its defined acidity, and complex sweetness.

This is an exceptional green to add to your menu. It’s dynamic across roast levels, punches above its weight at lighter roast levels, and holds up into a second crack for darker roasts. This coffee would thrive on house drip, and make a great addition into a blend.
For a roast with tangy acidity and bright flavors, aim for 1:30-2:00 in development with +11F past first crack.
For a roast with cooked sugars and hints of roast flavor, push for 3:00+ in development with +45F past first crack

Gran Galope lots are Excelso grade coffees (15/16 screen size) that have been cupped and evaluated for their "workhorse" versatility. These lots are expected to have a balance of sweetness, fruity effervescence, and a foundation of cocoa and/or toffee. Most Excelso Gran Galope offerings are a blend of coffees from between 10–30 smallholder farmers and are traceable to the region. Gran Galope selections from Cauca are cupped and purchased in Popayán.
