In our roastery
This coffee is returning to our menu for the third year. Every year, we are drawn to this coffee's quality and seek to highlight the skilled work being done at the Manos Juntas micromill. To highlight the care and attention taken by the producers, we roast this coffee at the lighter end of the spectrum. We feel that darker roast levels might diminish the hard work that makes this coffee special.
The natural processing method, more common to coffees from Africa, is used at Manos Juntas micromill to increase the cup quality, draw out new flavors, and use fewer natural resources like water at the mill.

The Manos Juntas Micromill is known for producing beautiful coffee. The mill strives to make coffee production simple for producers by paying them up front and taking on the responsibilities of processing and exporting.
Lighter profiles will display big sweetness and acidity, with candy-like flavors not far from tropical Starburst candies. We wouldn't recommend roasting this coffee darker than a light-medium roast level. The darker you roast, the less of the processing method and unique characteristics you will taste.

About
Manos Juntas is a micromill in Sotara area of Colombia's Cauca region, operated and managed by exporter Banexport. The entire concept of this micromill is based on simplifying tasks and responsibilities, for both producers and Banexport.
This particular offering was first purchased in its cherry form when delivered to the mill on the day of harvest. Upon arrival, the Brix and pH were recorded, and the cherries are placed in large hermetic tanks for a five-day-long anaerobic fermentation: Each tank is labeled with the name of the producer, to retain traceability. During this period, nitrogen gas is introduced into the tanks in order to stimulate the yeast. Brix and pH are measured constantly through this process and are used to determine the stopping point for fermentation; the coffee is then subjected to 20°C temperatures in order to cease fermentation and remove the yeast and other microorganisms.
For Naturally-processed coffees, the cherry is then "aged" in tanks for a period of five more days before they are taken to solar dryers. Drying takes 30–45 days.
