In our roastery 

When shopping for greens to build our summer and early fall menus, this Pink Bourbon offering caught our eye immediately. These offerings from Colombia get purchased quickly so we worked fast to contract with Cafe Imports. We were able to secure this coffee several months in advance of its arrival in the US. As our roastery operations continue to grow, we have more of these opportunities to lock in a larger amount of coffee, which helps us ensure its availability. 

This coffee is syrupy, sweet, and complex in tasting notes. We know from experience that a coffee like this is going to stand up to multiple roast levels. The cup is complex and we prefer a light to medium roast level. When we do push it to our darker roast levels, we'll only roast until we hear the outliers of second crack for mild roast notes and cooked fruit characteristics.

We'll offer this coffee on our Toll Roasting menu for the next several months.

This coffee is a perfect fit for single origin offerings. If you want a coffee that shines and will pique the interest of your light roast drinkers, don't hesitate to choose this green. Want a full bodied medium-dark roast? Los Naranjos Pink Bourbon is equally as exciting for the cream and sugar drinkers in your life. 

If you want complexity and nice acidity at a lighter roast level, try to push your development time to 1:30-2:00 with increase of +8°F-12°F after you reach first crack. If you are looking for a more developed cup with some roast flavor, quiet acidity and fuller body, push your development time to 3:00-3:30 with a +28°F-32°F temperature increase. 

This coffee would taste great as an exclusive pour-over offering, or as a flash iced brew. The rare varietal provides a unique talking point to customers, and a story that you can share as well.

About

Asociación Los Naranjos is a group of 50–60 smallholder producers who live and work in the area around San Agustín, Huila. This is one of Cafe Import's oldest partnerships globally and some of their greatest partners in Colombia. Cafe Imports has worked closely with them over the years and they were major contributors to their long term observational water study. 

Pink Bourbon: Cultivated from hybridization of Red and Yellow Bourbon. It's very rare, but the producers say it is quite resistant to rust. Pink and Orange Bourbons are very difficult to produce with consistency. The recessive genes leading to the expression of these colors are easily thwarted by the presence of yellow and red genes in a given pollen grain. A carefully isolated and contained lot can do quite well and preserve the unique color and character of this variety, though this is quite hard to find.
