In our roastery
For naturally processed coffees from Ethiopia, we lean towards a clean and fresh profile. Some natural coffees can be big, bombastic, and boozy, but we prefer a bit more balance. A natural like this one from the Limu region of Ethiopia is the type of coffee we try to always have on hand. It's a coffee that can be enjoyed year-round. We appreciate it on its own as a light roast single origin offering, and utilize it in our Cold Brew blend to add sweetness and juicy, red fruit flavors.

This coffee really opens up at a light to medium roast level. If you have a light roast Ethiopia natural profile in your data logging history, start with that as a reference point. Aim for 1:45 - 2:00 in your development phase with around +17F past first crack, and then adjust from there to taste.
This offering is very approachable and would work well as an introduction to naturals from Ethiopia. It's less of a fruit bomb and more of a fruit punch, making it accessible to a larger audience. This coffee would work well as a batch brew option at the cafe, brewed by the pot at home, or blended into a cold brew blend (like ours).

About
Tega & Tula Specialty Coffee Farm, purchased in the year 2015 by Ahadu Woubshet. It is one of the oldest large operations in Ethiopia. It was originally established in 2000 and had a great reputation for the first decade or so, before quality began to decline and the original owners encountered financial troubles. Ahadu knew of the potential for excellent coffee due to the perfect conditions for coffee and decided to purchase it to bring it back to its roots. Tega & Tula are actually two adjacent farms, named after the two nearby villages of Tega and Tula, found in the woreda, or district, of Gibo, in Kaffa, Ethiopia. The total farm area is nearly 500 hectares in size, with roughly 400 hectares planted in coffee. It is surrounded by protected UNESCO forests and absolutely stunning
