Brazil is a great coffee for roasters that want a balanced and approachable cup with mild acidity. It works very well as a foundation in a coffee blend to balance flavors while managing costs.  As the largest producer of coffee in the world, Brazil will almost always be available at any time of the year. The reliability and affordability of a green like this make it a mainstay for our green coffee menu. 

When we look for a coffee from Brazil, we seek out notes of chocolate and nuts with a solid tactile experience. Often, coffee from Brazil can taste strongly of malt or grains, or they can be a little too generic. When we find a Brazil with a bit more complexity while maintaining a classic profile, we know we've struck gold.


In Your Lineup

At lighter roast levels, roasters can expect lively flavors of chocolate and peanut. At medium roast levels, you start getting darker sugars with higher quality nuts like pecan. When you start hearing early signs of second crack, notes change to toasted nuts and black pepper.

Brazils make terrific blenders. Lean on this green in your espresso or drip coffee blend anywhere from 30%-60% as a foundational component for base notes. It's a true "coffee-flavored coffee" and serves as an excellent canvas for other origins to shine.

This coffee comes from producer Ivan Junqueira Ribeiro, owner of Fazenda Cruzeiro, a farm in Brazil's Campo das Vertentes region. The farm, established in 1923, spans a total of 1,021 hectares of which 381 are planted in Red Catuai, Yellow Bourbon, Mundo Novo, Topázio, Arara, and Rubi. Cherries here are picked ripe using both mechanical and manual harvesting techniques.  After harvesting, cherries are moved to a cement patio for drying.

Catucai is a cross between Icatu and Catuai, existing in yellow and red form.  It is a hardy variety resistant to leaf rust and characterised by vigorous growth and high productivity.
