In our roastery
The women producers of ARGCAFEE in Argelia are known for growing beautiful coffees. We love this offering's sweetness, balanced acidity, great body. This is a versatile coffee, and one that could serve as a flagship coffee for a menu.
We know from experience that a complex coffee coffee like this is going to shine at multiple roast levels. We prefer a light to medium roast level, where high notes and sweetness are perfectly balanced. When we do push it to our darker roast levels, we'll only roast until we hear the outliers of second crack for mild roast notes and cooked citrus character.
In your lineup
If you're searching for a foundational coffee to offer as a single-origin or to include in a blend, this is an ideal option. At lighter roast levels, citrus fruit notes stand out and create vibrancy in the cup. If you or your customers are looking for richer notes like pipe tobacco and toasted nuts, those notes will come out at a medium-dark roast dropped just before second crack.
For lighter profiles, try to push your development time to 1:30-2:00 with an increase of only +8°F-12°F after you reach first crack. If you are looking for a more developed cup with some roast flavor, quiet acidity and fuller body, push your development time to 3:00-3:30 with a +28°F-32°F temperature increase.

About
The Coca Substitution program is a partnership between Café Imports, Banexport, and ARGCAFEE created to promote the cultivation of legal crops such as coffee in place of illicit crops like coca. The partnership operates a nursery in Argelia, Cauca, that cultivates high-yielding and coffee leaf rust-resistant varieties while providing agronomical training and assistance to members of ARGCAFEE.
The substitution program also provides support by offering a guarantee of purchase by Café Imports and Banexport at higher-than-average prices. With these premiums, farmers are encouraged to shift towards the cultivation of legal crops that offer a sustainable source of income and to decrease the community’s dependence on the narco-state in Colombia.
