In our roastery
We do our best to carry one or two coffees from Ethiopia all year, but the past few months have made that goal a challenge. During a season of volatility for the green coffee market, it's more important than ever to source intentionally and plan your menu a few months in advance. As we approached the end of our contract for our last washed coffee from Ethiopia, we evaluated this offering as a possible replacement.
After a sample tasting, we knew this coffee would be a great fit for our greens offerings and roasted coffee menu. With so much competition for high quality greens, we had to move quickly to secure what we needed before this lot was sold out. Luckily, we were able to purchase at a volume that will allow us to carry this coffee for several months.
In your lineup
Syrupy, sweet and fruity are characteristics of coffee from Guji. They are great for filter options at lighter roast levels and can develop nicely into the light-medium roast level. Spend 1:30 to 2:00 in development post first crack for drip coffee roasts.
If you're roasting this coffee for espresso, try extending development to 2:20. This will help tame the high notes found in this green coffee and balance the acidity for espresso.

About
Guji is a beautifully forested area in southern Ethiopia. Before the early 2000's, this region was considered part of Sidama, but has since become its own region. The people of Guji grow coffee gardens at very high altitudes in the rich red soil of the highlands, setting this coffee's profile apart from neighboring regions. These smallholders deliver their coffee to washing stations to be sorted and processed together, developing flavors of fruits, deep chocolate, and light florals.
Arsosala is a washing station founded in 2015 that currently serves about 1,200 smallholder producers in the Uraga woreda of Guji. Coffees are picked ripe and depulped the same day, then fermented overnight before being washed clean and dried on raised beds. It typically takes the coffee 8–15 days to dry under sun and 15–20 days to dry when there are cloudy skies.
