In Our Roastery
This coffee stands out to us as an "all day cup" but with a more elevated presentation. We frequently look for coffees from Mexico to be an offering with great crowd appeal and comforting familiarity. Our favorites are coffees that provide that approachability while still offering something for the coffee connoiseur.
In this green, the cup profile is often heavy in body, rich in sweetness, and has an acidity that welcomes you in with open arms. After years of tasting wild anaerobic naturals and honey processed coffees, washed offerings from Mexico just feel like home.
In Your Lineup
If you prefer a fast and light roasting style, you can make the acidity in this coffee more tart by roasting very light. If you push development toward light-medium roast levels, this is where the depth of the cup shines. At darker roast levels, this Mexico stands nicely on its own and can work well in a blend. Earthy characteristics and pipe tobacco may be more present in the cup at darker roasts.

About
Cafe Imports has been sourcing coffee from the south of Mexico in the state of Chiapas from a couple of different cooperatives, Finca Triunfo Verde (FTV) and Campesinos Ecologicos de la Sierra Madre de Chiapas (CESMACH), since the mid-2010s. The cup quality on these has been solid year after year.
CESMACH has nearly 500 active members and has been managed by Sixto Bonilla for the duration of our relationship so far. The farms of both CESMACH and the FTV are located in the buffer zone of El Triunfo Biosphere Reserve, which is in the highlands of the Sierra Madre. it is one of the most diverse forest reserve areas in the world and contains Mesoamerica's largest cloud forest, as well as a protected natural environment for thousands of plant and animal species. All of the coffee produced here is shade-grown.
