| Lexington, Kentucky is home to a new micro roastery, Archetype Coffee Co. The one-man operation is managed by self-taught roaster David Barnes, who works on the 1 kilogram North machine from Mill City Roasters. Archetype’s signature coffee, Elixir, is a blend of green coffee from Guatemala, Colombia, and Ethiopia sourced from Cafe Imports, also based in Minneapolis. In partnership with a Louisville brewery, Great Floods Brewing Co., Archetype will be releasing a maple coffee porter to celebrate Great Flood’s 400th batch.
